DRAIN SANITIZING

Food is a perishable product, and food processors should take every precaution to avoid spoilage in order to protect the public and reduce product losses.

The activities to prevent the contamination of food products are essentially a continuous battle against bacteria. Control of bacteria can greatly extend the shelf life of all foods, maintain the products merchandising appeal and protect the consumer by ensuring a wholesome product.

Listeria is a species of bacteria that occur naturally in a wide range of environments: soil, water, mud, sewage and animals, including some humans. It grows by feeding off of the organic matter commonly found in food processing environments, including coolers, chillers and drains. Drains that are not properly cleaned often contain Listeria, which can lead to cross-contamination as this microorganism can migrate from drains onto surfaces where food is processed and handled, thus contaminating the food itself.
